Cilantro-lime rice — a bright and cheery side dish

If you’re looking for ways to use up a leftover bunch of cilantro, this is a great side dish with a hefty amount of flavour. It’s a super and speedy accompaniment for grilled chicken or Asian-inspired main courses.

Cilantro-Lime Rice Recipe
Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients
2 cups cooked basmati or long-grain brown rice
¾ cup cilantro leaves and stems, chopped
1 tbsp sesame seeds
1 tsp ginger, minced or finely grated
Juice of half a lime
Salt + pepper to taste

Prepare rice as per package directions on the stovetop or in a rice cooker. Add the cilantro, sesame seeds and ginger, mixing thoroughly. Cover and let stand for 5 minutes to let the flavours absorb, then add the lime juice and season with salt + pepper just prior to serving.

Don’t forget to rinse the cilantro before chopping — it’s usually quite gritty and dirty.
